About the blend

What is Tikka Twist?
An Indian-inspired all-purpose seasoning, hand blended in small batches in Elk River, Minnesota. It is built for the food you already cook rather than for making Indian dishes: chicken, roast vegetables, fries, eggs, popcorn.
Is this curry powder?
No, and that is rather the point. "Curry powder" is a generic British-era catch-all that does not exist in Indian cooking. This is a specific blend of whole spices balanced to work together. There is no turmeric and no paprika in it.
What does the name mean?
Tikka is the Indian side, the warm layered spice you meet in something like tikka masala. Twist is what we do with it: take food you already make and give it that flavour. Indian flavour, American kitchen.
Do I have to like Indian food?
No. It is a seasoning with Indian roots, not a curry and not a cuisine you have to commit to. Put it on roast potatoes or a chicken thigh and see what you think. Plenty of our regulars told us at the booth that they "don't really like Indian food".
How is it different from the spices in my cupboard?
Two things. It is blended in small batches and sold within months, rather than sitting on a shelf for two years losing its aroma. And it is one jar doing the work of several, balanced so you do not have to measure five things and hope.
What heat levels are there?
Two. Mild is the original: warm and aromatic rather than fiery, with gentle heat from chilli and Kashmiri chilli. Hot is the identical blend with ground habanero layered on top, so nothing was removed to make room for it and the flavour underneath is unchanged. See the product page for both.

Using it

What do I put it on?
Most things. Chicken, eggs, roast vegetables, potatoes, rice, chilli, popcorn, corn on the cob, fries. We have fifteen tested recipes if you want somewhere to start.
How much do I use?
Treat it like salt: a good sprinkle, then taste. About a teaspoon per serving is a sensible starting point. A 1.2 oz jar holds roughly five tablespoons, so a little goes a long way.
Do I add it before or after cooking?
Not dry into a hot pan. The blend carries tomato powder, soy sauce powder, amchur and crystallised lime, and those scorch and turn bitter over high dry heat. Mix it into yogurt, oil or a sauce first, stir it through raw egg, or sprinkle it on the moment food comes out of the oven while it is still glossy. Every one of our recipes does one of those, and each says which.
Will my kids eat it?
Mild is warm rather than hot, and the heat builds gently rather than biting. Most children are fine with it. Hot is a different matter, and is not aimed at them.
Can I use it on vegetables?
It is arguably at its best there. Roast cauliflower, smashed potatoes, broccoli, chickpeas and corn all take it well, and it is entirely plant-based.

Ingredients and dietary

What is in it?
Real spices and nothing else: no fillers, no anti-caking agents, no preservatives, no artificial colours or flavours. Every ingredient is listed in full on the jar and on the product page. Mild has sixteen, Hot has seventeen, the extra one being ground habanero.
What are the allergens?
Contains: Soy, Wheat. It is printed on every jar. If you have a soy or wheat allergy, this is not the product for you, and we would rather say so plainly.
Is it gluten free?
No. It contains wheat, because the soy sauce powder is wheat-fermented. We will not describe it as gluten free and you should not treat it as such.
Is there MSG in it?
No added MSG. The savoury depth comes from kelp, sun-dried tomato and fermented soy, which carry glutamates naturally, as many foods do. What we mean is that we do not add any.
Is it vegan?
Yes, and vegetarian. It is entirely plant-based, with no animal products.
How much salt is in it?
There is salt in it, for balance, as in most seasoning blends. We do not claim it is low sodium, because it is not. You use a sprinkle at a time rather than a spoonful.
Is it organic?
Not certified, so we do not claim it. What we will say is that it is real whole spices, freshly blended, with nothing artificial in it.
Is there turmeric or paprika in it?
Neither. People expect the yellow "curry" look, but our colour and warmth come from Kashmiri chilli and the rest of the blend. It is a deeper, different profile.
Is it kosher or halal?
Everything in it is plant-based, with no meat and no alcohol, but we are not formally certified as either. The full ingredient list is published so you can judge for yourself.
How should I store it, and how long does it keep?
Lid on, somewhere cool and dark, away from the steam and heat of the hob. It is freshly made with no preservatives, so it is at its best within about a year. Spices fade rather than spoil.

Buying, delivery and pickup

How much is it?
$11.99 a jar. Minnesota does not tax food ingredients, so there is nothing to add.
Why $11.99 for a spice jar?
Because of what is not in it. No fillers padding out the weight, and it is blended in small batches rather than warehoused. One jar covers what several ordinary jars would, and it lasts, because you use a sprinkle at a time.
How do I order?
Through the order page. You either collect free from our booth on a market day, or we hand deliver within Minnesota.
Where do you deliver, and what does it cost?
Within Minnesota only, by ZIP code, in three zones out to about fifty miles from Elk River. Fees, minimums and the free-delivery thresholds are set out in full in our terms of sale. If we cannot reach your address, the order page tells you before you pay.
Do you ship?
No, not anywhere, including elsewhere in Minnesota. As a registered cottage food producer we hand our products over in person, so every order is either collected from us at a market or delivered by us.
Are there bundle prices?
Yes, at the booth: three for $32 and five for $52. They are not on the website yet, so online is one jar at a time for now.
Can I change or cancel an order?
Yes, any time before we hand it over. Email us and we will change or refund it. The detail is in the terms of sale.
What if I miss the market I ordered for?
Nothing is lost. We bring it to the next market we are booked at and email you to say which one, or refund you if you would rather.
What is your refund policy?
Anything damaged or wrong is replaced or refunded, no argument. Unopened jars can be refunded within thirty days. We cannot take back an opened jar, for food safety. Full detail in the terms of sale.

Who makes it

Who are you?
Two people. Ishu grew up in India, went looking for those flavours in American grocery stores, found dusty curry powder, and started blending his own. Tami runs the other half of it. There is a longer version on the about page.
Where is it made?
In our registered home kitchen in Elk River, Minnesota. By hand, in small batches.
Is it inspected? Is it safe?
We are a registered Minnesota cottage food producer, MDA registration 20296872, we hold a food safety certification, and we carry product liability insurance. Minnesota requires us to tell you that these products are homemade and not subject to state inspection, and we do, on the jar and at the booth. It is the normal footing for a cottage food business.

Where can I find you in person?
Our booked market days are on the markets page, and it updates as the season changes.
Are you in any shops?
Not yet. Minnesota cottage food rules keep us to selling directly for now, so it is markets and this website. Shops come with the commercial kitchen.
Do you do wholesale?
Not yet, for the same reason, but we would like to. Email us and we will come back to you when we can.
Can you do gift bags or a large batch for an event?
Possibly, depending on timing and quantity. Email us with what you have in mind.

Are more products coming?
